These cupcakes don't need frosting. Instead, sprinkle tops with a mixture of sugar and cinnamon when you take them from the oven. They are delicious. With electric mixer, cream butter and add sugar. Beat until light and fluffy. Then stir in beaten egg and 1/4 cup applesauce.

Applesauce makes a nice cake. It is always moist. This cake can stand alone without frosting, but i like frosting on amlost anything sweet. I have made this cake for years. Cream shortening and sugar with mixer until light and fluffy. Add eggs and beat well. Add applesauce. Mix and sift together dry ingredients and stir with spoon. Bake in greased and floured 8 inch loaf pan at 350 F. for 30 minutes or until tested done by inserted toothpick. Cool on rack. Frost top with Lemon Butter Frosting if desired.

Oatmeal Rolls

This recipe makes a lot of rolls. Serve some and freeze the rest. Perfect amount for taking to a potluck. Pour boiling water over quick oatmeal. Let stand 5 minutes. Stir in shortening and molasses. Mix 1 cup of flour with dry milk solids, salt and yeast. Stir in shortening and molasses. Add quick oatmeal mixture to flour mixture

Chicken bake

Yes, here is another chicken recipe. chicken is so versatile. add some noodles and gravy and you have a tasty casserole. In mixing bowl, place 3 tablespoons butter and 1 cup milk. In Dutch oven, melt remaining butter. Blend in flour, 1 teaspoon salt and pepper. Add remaining milk all at once. Cook, quickly, over medium high heat until mixture thickens and is bubbly.

Turkey - Dressing bake

Here is another way to fix leftover turkey from that Thursday bird. Toss stuffing mix with turkey or chicken broth, beaten eggs and half of mushroom soup. Top with cooked turkey or chicken. Combine remaining undiluted soup with milk, pimiento and parsley. Pour over all. Cover with foil. Bake at 350 F. for 55 to 60 minutes or until set. Makes 8 generous servings.

Turk and noodles

Turkey has one big problem. There is often too much of it, whether it's the turkey breast or the whole bird. Thankfully, there are a number of ways to use leftover turk. I don't think noodles every saw anything they didn't like. They certainly like turkey. This recipe is a bit different.

Fancy ham loaf

Leftover ham doesn't freeze well. So what do you do with it? Make this loaf. In mixing bowl, combine ground ham and pork. In a medium bowl with electric mixer, combine eggs, bread crumbs and milk. Mix well. With into meat with hands. Place a greased 8 by 4 inch loaf pan, forming dome with hands. Top with pineapple slices and maraschino cherries. Bake in preheated 300 F. oven for 1 1/2 to 2 hours, basting with pineapple juice. Slice and serve with pieces of pineapple and cherries. Serves 6.

Coconut dream bars

Here is a different coconut bar cookie. You should have all the ingredients in your pantry and fridge. Substitute pecans for the walnuts, if desired. Mix all together until well blended. Press in bottom of lightly greased 9 by 13 inch baking pan. Beat eggs until light with mixer, Add sugars, salt and vanilla.. beat well. Add nuts and coconut. Spread over first mixture in pan. Bake at 350 F. for 15 minutes or until just set. Don't overbake. Cut in bars or small squares while still warm. Makes 3 dozen.
