Seared Scallops
Scallops are new to me. I am still learning how to prepare them. Here is a recipe for preparing scallops. I think it is pretty good.
SEARED SCALLOPS
1 1/2 pounds large scallops (about 24)
2 tablespoons vegetable oil
2 1/2 teaspoons ground coriander
Kosher salt
Freshly ground black pepper
Put scallops in a paper towel and pat dry with another paper towel. Transfer half of scallops to medium bowl and add 1 tablespoon oil and 1 1/2 teaspoons coriander. Season with salt and pepper. Mix well. Heat 1 tablespoon shortening in large skillet over medium heat. Add scallops in an even layer. Cook until golden brown on bottom, about 3 minutes. Flip the scallops and cook until opaque, about 2 minutes more. Prepare rest of scallops. Serve
