Taco Dogs

Here is a hot dog recipe, South of the Border Style. Let's say you don't have any fresh buns on hand, but you do have some flour tortillas in the fridge. Make Taco Dogs. This is a great recipe for anytime. It is best to make these in the kitchen, not on a picnic. You need to prepare the fixings near your appliances. Since you will be preparing the Taco Dogs individually, you need to be near a heat source.

TACO DOGS
8 hot dogs
1 cup refried beans
1 cup (4 ounces) shredded Cheddar cheese
1/2 cup salsa, medium or hot
1 cup shredded lettuce
1 tomato, chopped and drained

Cook hot dogs in boiling water to cover for 5 minutes or until plumped. Drain. Combine refried beans, shredded cheese and salsa in a glass bowl. Microwave on high. Place plumped hot dog on tortilla. Top evenly with shredded lettuce and chopped tomato. Roll up and eat. Great. You don't have a fresh tomato? Open a can of diced tomatoes, drain and you have it.
