Spinach Casserole

You won't find any rice in this dish. Spinach is the star here. Use rice or potatoes any way you like in another side dish. Of course, you could use frozen chopped broccoli instead of the spinach. Makes a good meatless supper.

SPINACH CASSEROLE
Two 10-ounce packages frozen chopped spinach
1 cup cream of mushroom soup
2 beaten eggs
1/2 chopped onion
1 cup shredded Cheddar cheese
1 cup mayonnaise
Buttered bread crumbs

Cook thawed spinach as directed. Drain. Add cream of mushroom soup, beaten eggs, chopped onions, shredded cheese and mayonnaise. Mix well. Place in greased casserole. Sprinkle top with buttered bread crumbs. Bake, uncovered, at 350 F. for about 45 minutes or until set. Serves 4.
