Salmon Rice Loaf
I first made this salmon loaf about 14 years ago. This was an especially difficult time for me. My husband had passed several months before. I had run up a credit card bill helping my oldest son build a house. Money was tight. This recipe fit my budget. Try it. It's good, if you like salmon, that is.
SALMON-RICE LOAF
15 ounce can salmon
2 cups cooked rice
1 tablespoon lemon juice
3 tablespoons margarine, melted
2 eggs, beaten
1 teaspoon salt
1 teaspoon pepper
1/3 cup bread crumbs
Pour salmon and liquid into large bowl. Remove bones. Break salmon into pieces. Add rice, lemon juice, margarine, eggs, bread crumbs, salt and pepper. Stir gently to combine until well mixed. Place in well greased loaf pan. Bake at 350 F. for 45 minutes or until set. Serve with a cheese sauce.
