Pasta Bean Soup
This is a good cold weather soup that's hearty enough for supper. To make it more hearty, saute a 1/2 pound of ground beef, breaking into small chunks, then add to other ingredients just before simmering. It reminds me of an Olive Garden soup
16 ounce can great northern beans, undrained
Two 14 1/2 ounce cans beef broth
Two 16 ounce cans stewed tomatoes, diced or mashed
14 ounce spaghetti sauce with meat
2 ribs celery, thinly sliced
1 lemon-sized onion, sliced
2 cups small spiral pasta, uncooked
Salt and pepper to taste
Combine everything in a Dutch oven over medium high heat. Bring just to a boil. Turn heat to low. Cover and simmer 30 minutes or until pasta is tender, stirring occasionally. Serves 6.
