Oatmeal Coconut Cookies

Coconut is one of my favorite flavors. This is one of my current favorite cookies. There are other favorites, but this is the one I go to now. I try to use a cookie batter that doesn't have to be rolled out. Just drop from a spoon or roll into small balls, like this recipe.

OATMEAL COCONUT COOKIES
1 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
2 cups plain flour
1 teaspoon baking soda
1/2 cup quick oatmeal
1 cup flaked coconut

In large bowl, cream margarine and both sugars until light and fluffy. Beat in egg and vanilla. Combine flour and baking soda. Gradually add to creamed mixture. Mix well. Beat in oatmeal and coconut. Cover and chill 1 hour. Form into 1 inch balls. Place 2 inches apart on ungreased baking sheet. Bake at 350 F. for 12 minutes or until lightly browned. Remove to cooling rack. Makes about 5 dozen cookies. This recipe has no salt.
