Not a Pecan Pie
This is not a pecan pie. It's a peanut pie. I suppose it could be a black walnut or an English walnut pie, too. It is put together like a classic pecan pie, but, of course, it tastes peanuty.
NOT-A-PECAN PIE
1 cup coarsely chopped salted peanuts
1 1/2 cups light corn syrup
4 eggs, slightly beaten
1 teaspoon vanilla
Dash of nutmeg
Unbaked 9 inch pie shell
Spread chopped peanuts in bottom of unbaked pie shell. Mix thoroughly together the corn syrup, beaten eggs, vanilla and dash of nutmeg. Pour over peanuts in pie shell. Bake at 350 F. for about 40 minutes or until set.
