Grasshopper Pie
I remember when this pie first started appearing at potlucks. Those who made it tried to suggest that it was hard to do. Not just anyone could make it, they said. Not so. It takes a bit of fussing but nothing even a novice cook couldn't do. Try it. Cooks today will still think you are something special when you set this on the dessert table. Let them fuss over you.
GRASSHOPPER PIE
Crust: 1 1/4 cups crushed chocolate wafer cookies
1/3 cup melted butter, not margarine
Stir together and pat into bottom and up sides of 9 inch pie plate. Chill.
Filling: 2/3 cup milk, scalded
24 marshmallows
Add marshmallows slowly to scalded milk in double boiler and melt, stirring often. Then cool to room temperature. Next, whip and fold into 1 cup whipping cream:
2 ounces crème de menthe
1 ounce white crème de cacao
Fold into cooled marshmallow mixture and pour into chocolate crust. Freeze until set . When ready to serve, top with a dollop of whipped cream.
