Easy Cheese and Potatoes
When you think of cheese with potatoes, you usually think of Velveeta or Cheddar, not cottage cheese. Surprise! This is a good combination. There is no milk in here, just cottage cheese and egg. If you are up for trying new flavors, give this one a go. It is good.
EASY CHEESE AND POTATO PIE
5 medium potatoes, peeled, 1 1/4 pounds
1 1/2 cups cottage cheese
1 egg
3 green onions with tops, chopped
1/4 teaspoon pepper
2 cups shredded Cheddar cheese
Cook potatoes in saucepan over medium heat until tender. Drain and slice thin. In food processor, combine cottage cheese, egg and black pepper. Process until creamy. Coat a shallow 9 inch pie plate or casserole with cooking spray. Place 1/3 of the potatoes in single layer in casserole. Spread 1/3 of the cottage cheese mixture over potatoes and sprinkle with half of chopped green onions and Cheddar cheese. Add another 1/3 of potatoes and sprinkle with remaining cottage cheese mixture. Top with remaining potatoes and sprinkle with remaining green onions and Cheddar cheese. Bake, uncovered, at 375 F. for 30 to 40 minutes or until top is golden and potatoes are tender. Serves 2.
