Earl Grey Shortbread Cookies

Here is another use for those Earl Grey tea bags lounging in your cupboard. If you are looking for an unusual cookie, you've found it.

EARL GREY SHORTBREAD
2 cups plain flour
2 tablespoons loose Earl Grey tea, from tea bags
1/2 teaspoon salt
3/4 cup powdered sugar
1 teaspoon vanilla
1 cup butter, room temperature

First, dice butter into small pieces. Then, in food processor, pulse together flour, tea and salt until tea is spotted throughout the flour. Add powdered sugar, vanilla and butter. Pulse until dough is formed. Transfer dough to a sheet of plastic wrap. Roll up into a log about 2 1/2 inches in diameter. Chill for 30 minutes. Slice into 1/4 inch discs. Place about 2 inches apart on parchment lined baking sheets. Bake at 375 F. until edges are just browned, about 10 to 12 minutes. Cool in pan for 5 minutes, then transfer to wire rack to cool. Makes 2 dozen.
