Country Style Potato Sausage Casserole
Bulk pork sausage is one my favorite "go-to" meats for supper. It's cheap to buy and stores well in the freezer. No worries about getting freezer burnt. It comes well wrapped from the store.
I remember when I was a housewife with small children at home. It seemed that my husband's paycheck had a hard time covering enough groceries to last until the next paycheck, but I always had potatoes and onions. Bulk pork sausage from the freezer was the basis for a number of meals.
This recipe is big enough to feed your whole family. Need a little more? Just add more potatoes. It still will be good.
Country Style Potato Sausage Casserole
2 pounds potatoes, peeled and sliced
1 pound bulk pork sausage
1 large onion, diced
3 bay leaves
1 tablespoon margarine
2 cups chicken stock
Salt and pepper to taste
Parsley
Cut raw sausage in cubes. Put sausage, potato and onions in casserole in layers in Dutch oven. Add bay leaves, salt, pepper and margarine. Pour chicken stock over all. Cover and simmer on low heat for 45 minutes or until potatoes are tender. Before serving, remove bay leaves and sprinkle with parsley, either dried or freshly chopped.
Note: If you are out of chicken stock, mix up 2 chicken bouillon cubes and 2 cups water. Just add pepper, but no salt.
