Chicken and Stuffing
Here is another chicken breast recipe. There are so many things you can do with chicken. If you have a can of chicken breast on the shelf or chicken parts in the freezer, you have supper under control. This recipe can be easily cut in half. It is a quickie, done in 35 minutes. Good, too.
CHICKEN AND STUFFING
One 6 ounce pkg seasoned stuffing mix
8 skinless boneless chicken breast halves, 4 ounces each
1 tablespoon oil
4 slices Swiss cheese, halved
2 tablespoons margarine, melted
1 can cream of chicken soup, undiluted
1/4 cup water
Prepare stuffing mix as directed. Transfer to buttered 9 by 13 inch baking pan. In large skillet, brown chicken in oil. Place over stuffing. Top each chicken breast with 1/2 slice of cheese. Drizzle with margarine. Combine soup and water. Spoon over chicken. Bake at 350 F. for 35 minutes. Makes 8 servings
To make half the recipe for 4 people do the following:
One 6 ounce pkg seasoned stuffing mix
4 skinless boneless chicken breast halves
1 tablespoon oil
2 slices Swiss cheese, halved
1 tablespoon melted margarine
1 can cream of chicken soup, undiluted
1/4 cup water
Prepare as above, except bake in 9 inch square pan for the time given.
