Beets in Sour Cream

Must be my eastern European ancestry, but I like beets any way you fix them. This recipe is a bit different from what you may be used to. Try it on that cold winter day when you are feeling adventurous. It could be a keeper at your house, too.

BEETS IN SOUR CREAM
1 pound can sliced or diced beets
1 teaspoon lemon juice
1 cup sour cream
1 teaspoon brown sugar
1/4 cup mayonnaise
1/4 teaspoon dry mustard

Heat beets in saucepan. Drain. Combine remaining ingredients with 1 teaspoon dried chives. Add to beets. Heat slowly, stirring occasionally, but do not boil.
