Baked Onions

Yes, I like onions. I remember from my childhood during the Great Depression that Mother flavored our monotonous menu with onions whenever possible. She only had that old 1936 Detroit Times cookbook for guidance. I don't know what she did before that. Introduce this recipe to your family. They will learn that onions can be used for more than just flavor. Onions can play a starring roll. It is simple but delicious.

BAKED ONIONS
6 to 8 onions, sliced
1 cup crushed potato chips
8 ounces shredded cheddar cheese
2 cans cream of mushroom soup
1/2 cup milk
1/8 teaspoon cayenne pepper

In a greased casserole, place alternate layers of sliced onions, crushed potato chips and shredded cheese. Combine mushroom soup and milk. Pour over all. Sprinkle with cayenne pepper. Bake, uncovered at 350 F.for 1 hour or until onions are tender.
