Baked Lemon Pudding

We all like Lemon Pie. This old-timey dessert is easier to make. It doesn't need a crust; no sauce, either. If you have a couple lemons in the fridge, you are all set to go.

BAKED LEMON PUDDING
3 tablespoons shortening
1 1/4 cup sugar
Juice of 1 1/2 lemons
Grated rind of 1 lemon
1 1/2 cups milk or light cream
3 tablespoons flour
3 eggs, separated

Cream shortening and add sugar gradually. Cream well. Add well-beaten egg yolks, flour, lemon juice and rind. Mix thoroughly. Add milk. Then fold in stiffly beaten egg whites. Pour into buttered baking dish set in pan of hot water. Bake at 350 F. about 45 minutes. A delicate crust will form on top. No sauce needed, but may be served with Cool Whip.
