Asparagus Supreme
Asparagus is one of those veggies that can stand alone with just a little butter, salt and pepper, but it doesn't have to stand alone. There are some great asparagus casseroles. This is one of them.
ASPARAGUS SUPREME
1/2 cup minced onion
2 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon each of salt and pepper
1 cup sour cream
1 1/2 pounds cooked asparagus spears
1/2 cup shredded cheddar cheese
Saute onion in butter until golden. Add flour, salt and pepper. Mix well and cook until flour is blended and bubbly. Add sour cream. Continue cooking but do not let mixture come to a boil. Place cooked asparagus spears in shallow baking pan. Cover with sour cream mixture. Sprinkle with shredded cheddar cheese. Bake, uncovered, at 350 F. for 15 to 20 minutes or until cheese is melted and casserole is thoroughly heated. Serve.
