Apple Coffeecake

Apples make a delicious coffeecake. This recipe only takes two. What a good way to use up those two apples withering away in the fridge crisper drawer. Peel 'em and use 'em.

Apple Coffeecake
5 tablespoons shortening
1/3 cup sugar
1 egg
1/2 cup milk
1 1/2 cups sifted plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 medium apples, peeled, sliced
2 tablespoons sugar
1/4 teaspoon cinnamon

Grease an 8 inch square baking pan. Cream shortening and sugar. Add unbeaten egg and beat until fluffy. Add milk. Fold in sifted dry ingredients. Spread evenly in pan. Place apple slices on top of batter, pressing narrow edge into batter. Sprinkle with the 2 tablespoons sugar mixed with cinnamon. Bake at 400 F. for 20 to 25 minutes. Makes 6 servings.
