Hopping Bunny Rabbit

Are you looking for something different to serve at your next get-togther? Something that doesn't require taking out a loan on the car to afford? This is such a recipe. Everybody likes cheese. Everybody likes toast. Here you have it, a good party dish.
Put the pot of rabbit on the kitchen table. Add a pile of small plates, some paper napkins and long handled forks. Back in my drinking days I would have added cold beers, but today with my Christian lifestyle, it's iced tea for me. Enjoy.
HOPPING BUNNY RABBIT
2 cups hot thin white sauce
8-ounces shredded sharp cheddar cheese
2 beaten egg
1/2 teaspoon dry mustard
Stir a little of the hot white sauce into the raw beaten eggs. Add to remaining cheese mixture. Stir constantly over low heat until thickened and smooth.
As with other egg dishes you can gussy up the recipe. Almost any soup, such as cream of mushroom, celery or chicken can be used in place of the white sauce.
Of course you can pour the cheese sauce over toast points, but it is more fun to spear a piece of bread or toast and dip in the cheese sauce.
If you are so inclined, ½ cup of beer can be substituted for the white sauce. Add more cheese and a few grains of cayenne pepper. Play with the recipe.
