Turkey Pilaf
I often looked for the largest turkey i could afford, just so i would have leftover turkey. I don't do that any more with just Anne and me at home. Here is another recipe from my past you might like.
2 cups cooked white meat turkey chunks
1/2 cup butter
1 medium onion, sliced thin (1 cup)
1 cup raw rice
2 1/2 cups water
2 chicken bouillon cubes
1/2 cup shredded Cheddar cheese
1/4 cup minced green pepper
Melt butter in heavy skillet over medium heat. Add onions and cook 1 minute. Add raw rice. Cook slowly for 3 minutes, stirring constantly until rice is opaque. Add water and bouillon cubes to the rice mixture. Bring to a boil over medium heat. Add turkey chunks. Cover and cook over low heat for about 25 minutes or until rice is tender. Stir occasionally. Remove from heat. Stir in cheese and green pepper. Makes 5 cups or 4 servings.
