Turkey - Mac Salad

So you bought a bigger bird than you needed and now you are swamped with leftovers? Here is another good way to tackle that problem.

TURKEY – MAC SALAD
8 ounce package elbow or shell macaroni
1 1/2 cups diced cooked turkey
1 cup diced celery
1 small onion, minced
1/2 cup chopped green pepper
1/4 cup pickle relish
Mayonnaise
Salt and pepper to taste

Cook macaroni, drain and rinse in cold water. Cool. Add turkey, celery, onion, green pepper, relish and enough mayonnaise to moisten. Season with salt and pepper. Mix well. Serve on salad greens, if desired. Makes 6 servings.
