Sweet potato delight
Here is a different way to prepare sweet potatoes. Cook and serve vanilla pudding mix is the mystery ingredient. Just add the dry mix to the hot mashed sweet potatoes. Top with the marshmallows. Your family will think this is the usual sweet potato casserole. That is until they take their first bite. Surprise 'em. Try it.
SWEET POTATO DELIGHT
4 large sweet potatoes, peeled, diced.
3/4 to 1 stick butter
3/5 ounce pkg cook and serve vanilla pudding mix
1 egg, slightly beaten
1/2 cup milk
3/4 cup sugar
1/2 teaspoon vanilla
Pinch of salt, optional
Mini Marshmallows
Boil sweet potatoes until soft. Drain and mash while hot. Blend in butter and salt. Add pudding mix, egg, milk and sugar. Beat with hand mixture until fluffy. Place in buttered 2 quart casserole. Bake at 350 F. for 30 minutes. Top with marshmallows and return to oven to brown. This freezes well and keeps well in fridge so it can be prepared several days ahead.
