Sugar - Free Strawberry Jam

if you need a sugar-free snack, this is for you. Unflavored gelatin takes the place of fruit pectin. Give it a try.

SUGAR-FREE STRAWBERRY JAM
2 tablespoons lemon juice
2 tablespoons water
1 envelope unflavored gelatin
1 1/2 teaspoon cornstarch
2 cups fresh sliced strawberries,
washed and hulled
Sugar substitue to equal 1 cup sugar

Combine lemon juice, water, gelatin and cornstarch in saucepan. Heat, stirring constantly, until gelatin dissolves and cornstarch dissolves. Add berries to gelatin mixture. Heat to boiling point, stirring constantly. Boil 3 minutes. Remove from heat and stir in sugar substitute. Pour into hot sterilized jars and seal. Set at room temperature until cool. Store in freezer.
