You could make this recipe two ways. Either follow the recipe below or buy two 46 ounce cans of tomato juice at the store and add remaining ingredients. SNAPPY TOMATO JUICE
10 pounds tomatoes, peeled and chopped
2 celery stalks with leaves, chopped
1 onion, studded with 8 whole cloves
1 bay leaf.
2 beef bouillon cubes
1 tablespoon sugar
1 tablespoon salt
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons prepared horseradish
1/4 teaspoon Tabasco sauce
Combine all ingredients in large kettle. Heat to boiling over medium high heat. Reduce heat to simmer, uncover, stirring frequently, until tomatoes are soft. Remove onion and bay leaf. Press mixture through a food mill. Heat juice just to boiling. Fill quart jars and cover with lids. Process in hot water bath for 15 minutes. Makes 3 quarts.
