Scalloped Onions
When I have too many onions on hand, I will make this casserole. Do your eyes water when slicing onions? I chew on pieces of bread. That seems to work. Onions are another veggie I like just about any way you fix them. This is a good one.
SCALLOPED ONIONS
5 medium onions, white or yellow, peeled
1 cup shredded cheddar cheese
5 1/2 ounce can evaporated milk,
or half a large can
Salt and pepper to taste
Parmesan cheese
Slice onions into 1/2 in slices. Cook in salted water until just tender. Drain well. Place in buttered 1 quart casserole. Add cheddar cheese and seasonings. Pour evaporated milk over all. Sprinkle top with Parmesan cheese. Bake, uncovered, at 375 F. until milk and cheese have blended into a sauce.
