Savory stuffed zucchini

Yup, here's another zucchini recipe. Such a versatile vegetable. Just a little ground beef goes a long way here. You have a meat and vegetable dish. A rice dish would go well here.

SAVORY STUFFED ZUCCHINI
3 medium zucchini
1 tablespoon butter
Salt and pepper
1/2 pound lean ground beef
/12 cup chopped celery
1/4 cup chopped onion
8 ounce can tomato sauce
1/2 cup soft bread crumbs
1/4 cup Parmesan cheese

Wash squash thoroughly. Cook it whole in boiling water for 5 minutes. Cut squash in half lengthwise. Scoop out and discard seeds. Sprinkle cavities with salt and pepper. Set aside. Next, melt butter in large skillet. Add ground beef, celery and onion. Cook, stirring constantly, until beef is crumbled and brown. Add tomato sauce and bread crumbs. Stir well. Spoon mixture into squash cavities. Place squash halves in shallow baking pan. Sprinkle with cheese. Bake, uncovered, at 375 F. for 30 minutes. Serves 6.
