Salmon Zucchini Patties

Here is another zucchini recipe. Zucchini goes with anything. You can even bake bread with it. However, the only bread in this recipe are the crumbs in the patties. They’re good, too.
Salmon Zucchini Patties
1 pound can salmon, drained and flaked
3/4 cup shredded zucchini
1/2 cup dry bread crumbs
1 tablespoon Dijon mustard
2 teaspoons lemon pepper seasoning
2 eggs, beaten
1/2 cup mayonnaise, divided
1 minced clove garlic, divided
1/2 cup butter
In mixing bowl, combine flaked salmon, zucchini, bread crumbs, seasonings and beaten eggs. Add half of mayonnaise and minced garlic. Don't overmix. Shape into twelve 12-inch thick patties. Chill 1 hour. Cook patties in batches in large non-stick skillet in 1/2 cup butter on medium heat for 8 minutes until golden brown on both sides, turning once. Add more butter, if necessary. Remove to serving plate. Combine remaining mayonnaise and minced garlic. Serve over salmon patties. Makes 6 servings.
