Red Cabbage
Red cabbage is so pretty resting there in the produce counter next to its green cousin. I had never found a satisfying recipe for red cabbage until recently. The flavor is different from that of the green variety so it needs to be prepared differently. Try this.
Red Cabbage
Large head of red cabbage
1 medium onion, minced
2 cups cider vinegar
2 cups water
1-1/2 cups sugar
2 teaspoon salt
1 teaspoon pepper
1/2 pound bacon
1-1/2 cups applesauce
Cut cabbage head in quarters and remove core. Shred cabbage. Place shredded cabbage in Dutch oven over medium heat.
Add onion, vinegar, water, sugar, salt and pepper. Bring to a boil. Reduce heat, cover and simmer until cabbage is tender.
Meanwhile, dice bacon and saute in frying pan until nearly crisp.
When cabbage is done, add bacon with its fat to the cabbage. Stir and simmer a few minutes longer. Then add applesauce. Stir all and serve.
