Potato Crusted Quiche
This makes a tasty dish for lunch or meatless supper. To make this quiche extra special, cook and crumble 4 slices bacon, adding it to the egg mixture with the cheese and onions.
Potato Crusted Quiche
3 cups frozen hash browns, thawed
1/4 cup butter, melted
3 eggs
1/2 cup milk
1/2 cup sour cream
1 1/2 cups shredded Cheddar cheese
4 green onions, minced
Pat hash browns dry with a paper towel. Then place in mixing bowl and add butter. Mix lightly, Press onto bottom and up sides of 9-inch pie plate. Bake at 375 F. for 20 minutes. This makes the crust.
Meanwhile, whisk eggs and milk in bowl until well blended. Stir in sour cream, then cheese and onions. Reduce oven temperature to 350 F. Pour filling into crust. Bake 30 minutes or until center is set and crust is golden brown. Let stand 5 minutes before serving. Makes 6 servings.
