Pan Fried Turkey Parmesan

There are usually a few slices of turkey breast left over from the big dinner. Of course, there are other pieces, but they are smaller. It is a shame to cut up those nice slabs of white meat. Here is a recipe that will do them justice.

1/2 cup vegetable oil
2 tablespoons lemon juice
1 cup grated Parmesan cheese
1/2 cup biscuit mix
1/4 teaspoon black pepper
6 to 8 slices cooked turkey breast.
2 tablespoons butter

Mix oil and lemon juice in a small shallow bowl. Mix cheese, biscuit mix and black pepper in another shallow bowl. Dip turkey slices in oil mixture. Coat with cheese mixture. Heat butter in 10 inch skillet over medium heat until hot. Cook turkey until light brown, 2 to 3 minutes. on each side. Serve with cranberry relish on the side.
