Orange Glazed Carrots with Bacon
I haven't seen this way to fix carrots at any potluck around here. Usually, carrots are not a potluck item, and that is too bad. This dish is delicious. Try it yourself at home and then take it to the next potluck. Be ready to answer the question of how to fix it.
ORANGE GLAZED CARROTS WITH BACON
2 pounds fresh carrots
1/4 cup orange juice
4 slices bacon
3 tablespoons orange jello (1/2 of 3 ounce pkg)
1 teaspoon orange zest
Peel carrots. Cut carrots in chunks. Cook in boiling water in Dutch oven for 5 to 10 minutes or until tender-crisp. Drain carrots. Reserve 1/2 cup cooking water. Cook bacon in large skillet over medium heat until crisp. Remove bacon from skillet and drain on paper towels. Discard all but 2 tablespoons of the drippings. Wipe skillet with paper towels. Bring reserved cooking water and orange juice to a boil in same skillet. Add dry jello. Stir 2 minutes until completely dissolved. Add reserved bacon drippings and carrots. Cook 2 to 3 minutes or until carrots are glazed and tender, stirring frequently. Stir in orange zest. Transfer carrots and sauce to serving dish. Crumble bacon. Sprinkle over carrots. Serves 8
This dish can be made ahead and kept warm in a crock pot. Recipe can be cut in half. Use 1 pound carrots with the same amount of other ingredients.
