Old Plantation Rolls

Want a yeast roll that doesn't require kneading? This recipe stirs up fast. Of course, it does take an hour or so to proof. Then they are shaped and set to rise again. It is great for the holidays. You can set it out of the way to rise. When your oven is freed up will be time enough to bake them. If you prefer another shape of rolls, do whatever you like.
Old Plantation Rolls
1 cup scalded milk
1/4 cup sugar
1/2 cup shortening
3/4 cup cold water
1 unbeaten egg
1 package yeast dissolved in 1/4 cup lukewarm water
5 1/2 cups plain flour, divided
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
Mix together scalded milk, sugar and shortening in large mixing bowl. Cool by adding cold water. Add egg to milk mixture. Add softened yeast. Blend in 3 cups flour.
Cover and let stand in bowl for 20 minutes. Combine 2 1/2 cups flour, baking powder, baking soda and salt. Add to above soft dough. Place in large greased bowl. Cover. Let rise until doubled, about 1 hour.
Turn out, form together into a ball. Cover with inverted bowl and let stand 15 minutes. Turn out and shape into 24 cloverleaf rolls (3 small balls of dough together in greased muffin cups.
Spray tops with cooking spray. Let rise in warm place until doubled, another hour. Bake at 400 F. for 25 to 30 minutes until nicely browned. Turn out of muffin cups and brush tops with melted butter. Keep warm until time to serve. Makes 24 rolls.
