Oatmeal Coconut Cookies

Drop cookies are easy to make. I like that since rolling out cookie dough is not one of my favorite tasks. Just stir it up, drop dough onto baking sheet and bake. What could be easier than that?

OATMEAL COCONUT COOKIES
1 cup butter, softened (no margarine)
1 packed cup brown sugar
2 eggs
1 teaspoon salt
2 1/3 cup plain flour
1 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons vanilla
2 cups flaked coconut
1 cup either old fashioned or quick oats
3/4 cup chopped nuts, toasted walnuts are best)

In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk together flour, salt, baking soda and baking powder. Gradually beat flour mixture into creamed mixture. Stir in coconut oatmeal and chopped nuts. Drop by teaspoon onto greased baking sheet. Bake at 375 f ., for 8 to 10 minutes
