Marinated Mushrooms

This is a great way to prepare fresh mushrooms for a relish tray. Use the small button mushrooms from the produce department at Food City. You wouldn't think that fresh mushrooms would have much flavor, but they do. If you never have tried them this way, it will be a treat for you, plus another recipe to add to your holiday collection.

Marinated Mushrooms
Two 8 oz. boxes fresh small button mushrooms
16 oz. bottle Italian dressing
1 teaspoon minced garlic
1 tablespoon fresh herbs: fresh parsley and cilantro
1 teaspoon salt
1 tablespoon lemon juice
1/3 cup sliced pickled banana peppers
1 small can sliced black olives, drained

Clean mushrooms and trim stems. Toss mushrooms, olives and banana peppers into a non-metal container. Mix remaining ingredients and pour over mushrooms. Cover and marinate at least overnight, stirring occasionally. Can be served with toothpicks or as part of a relish tray.
