Liver Patties

Not everyone likes liver. It is safe to say that most people dislike liver. I love liver. My daughter Anne hates it. We live together, so I can only fix it if she is not going to be home that day. That out of the way, let me tell you why I like liver. Well, I don't know why, I just do.

There are not many ways to prepare liver. Fried liver, liver loaf, liver pate and liver patties about sums it up. It definitely stands alone. Liver doesn't blend well with other meats. I remember the time a neighbor gave us a bear liver. He had killed and dressed out a bear. He said the liver would be a treat. Later, we doubted his motives for giving it to us. It looked like any ordinary liver laying there on the counter, but it was not. I sliced it, soaked it in cold water, breaded it and tried to fry it. The odor was so horrendous we had to open all the windows, turn on every fan we could find and leave the house. It was several shades on the other side of awful.

That out of the way, let me tell you my favorite way to prepare liver: Liver Patties. My husband would eat it with me. My kids would not. It is a bit of a process to prepare, but worth the trouble. Before you turn up your collective noses at liver, let me remind you that many people consider chicken livers a delicacy. I don't see the difference between beef liver, pork liver or chicken liver. To me liver is liver, except when it's bear liver.

LIVER PATTIES
1 1/2 pounds beef or pork liver
1 large onion, coarsely chopped
2 eggs, lightly beaten
2 tablespoons plain flour
Salt and pepper to taste
1/2 cup bacon drippings to fry in

Rinse liver in cold water and soak in water for a while. Place the liver in large saucepan. Cover with boiling water and simmer 5 minutes on low heat. Drain. Cool. Pulse in food processor with onion until finely ground. Remove to large bowl. Add eggs, flour, salt and pepper. Mix well. Carefully form into patties. Heat bacon drippings in large skillet over medium heat. Add patties. Reduce heat to medium-low and cook until well browned on both sides, turning once, then serve.

Liver Loaf is prepared the same way. Once all ingredients are mixed together, pour into greased loaf pan and bake at 350 F. until set, about 45 minutes to 1 hour. Let rest 10 minutes before slicing and removing from pan. Delicious!
