Honey Chicken Leg Quarters
We know that honey mustard chicken wings are good. The same can be said for chicken leg quarters. They often come in ten-pound bags at the meat counter at a reduced price. Try this recipe and watch your family dig in.
Honey Chicken Leg Quarters
1/2 cup butter, melted
1/4 cup prepared mustard
1/2 cup honey
2 tablespoons lemon juice
6 chicken leg quarters
Salt and pepper
Combine butter, honey, mustard and lemon juice. Stir well. Lightly sprinkle chicken with salt and pepper. Place chicken quarters, skin side up in a lightly buttered 9- by 13-inch baking pan. Pour honey mixture over chicken. Cover and refrigerate 3 to 4 hours or overnight.
Remove from fridge. Bake, covered, at 350 F for 70 minutes. Remove cover. Turn chicken pieces. Bake 30 minutes longer or until tender. Bake occasionally with pan drippings after it is uncovered. Makes six servings.
