Ham, potato and green bean casserole
This is a classic combination for a good casserole. If you have some left-over ham in the fridge, you are well on your way for a delicious dish. You could use peeled leftover baked potatoes, too. It would make a good dish to take to a potluck.
HAM, POTATO AND GREEN BEAN CASSEROLE
3 cups diced cooked ham
3 medium potatoes, cooked, diced
16 ounce can green beans, drained
1/4 cup butter or margarine
1/4 cup plain flour
12 teaspoon onion powder
2 cups milk
1 cup diced Velveeta cheese
2 tablespoons melted butter or margarine
1 1/2 cups soft bread crumbs
Melt the 1/4 cup of butter in saucepan over medium heat. Stir in flour and onion powder.. Cook until bubbly, about 1 minutes. Gradually add milk, stirring constantly until thickened. Add diced cheese and simmer until cheese is melted, stirring often. Set aside. Arrange potato slices in buttered 2 1/2 quart casserole. Cover with green beans. Pour half the cheese sauce over green beans. Add ham and remaining sauce. Mix melted butter with bread crumbs. Sprinkle crumbs over casserole. Bake at 350 F. for 30 to 35 minutes or until crumbs are lightly brown and casserole is bubbly. 6 servings.
