George Washington Cherry Treat

Fresh pie cherries aren't available in February. That's okay. Food City does my canning for me these days. They have one pound cans of red tart cherries on the shelf every day. I call them sour cherries.

Do you really think George cut down a cherry tree? Do you really think he fested up to the deed? Naw. George was known as a ladies man. I wouldn't be surprised if he did tell a lie now and then.

“Does this dress make me look fat?”

“No, sweet Martha. That dress was made for you.”

Yeah, but he didn't answer her question. Is that telling a lie? I would have held his feet to the fire and insisted on a direct answer. It was a lie in my book. He evaded the question.

Well, pie is pie and this recipe is not. It is more of a cobbler and much easier to make than a two crusted pie. Hope you like it.

GEORGE WASHINGTON'S CHERRY TREAT
2/3 cup sugar
2 tablespoons cornstarch
Two 1 pound cans red tart cherries, drained
1 cup cherry juice
1 tablespoon butter or margarine
1/4 teaspoon cinnamon
Few drops of red food coloring

Combine sugar and cornstarch in medium saucepan. Add cherry juice and cook over medium heat until thickened. Remove from heat and stir in cherries, butter, cinnamon and food coloring. Pour into greased 8 inch square baking pan.

TOPPING:
1 cup sifted flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk
2 tablespoons sugar

Into medium bowl, combine first four ingredients. Whisk until well mixed. Cut in shortening until like coarse meal. Add milk gradually while mixing with a fork. Do not overmix. Drop by tablespoons onto hot cherry mixture. Sprinkle 2 tablespoons sugar over pastry. Bake at 400 F. for 30 minutes. Serve hot. Makes 6 to 8 servings.
