Frosted carrot bars
Here is a different cookie recipe. It reminds me of a carrot cake. Make these bars when you want a special cookie to serve,
4 eggs
2 cups granulated sugar
1 1/2 cups salad oil
2 cups sifted plain flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
3 cups finely grated raw carrots
1 1/2 cups flaked coconut
1 1/2 cups chopped nuts
Beat eggs until light. Gradually beat in sugar. Alternate salad oil and flour sifted with soda, salt and cinnamon. Mix well. Fold in carrots, coconut and nuts. Spread evenly in 2 greased 9 by 13 inch baking pans. Bake at 350 F. for 25 to 30 minutes. Remove from oven and set on racks to cool. Spread with cream cheese frosting then cut into 1 inch by 3 inch bars. Store in refrigerator or freezer.
CREAM CHEESE FROSTING
Blend 3 ounces softened cream cheese with 1 tablespoon half and half. Add 2 1/2 cups sifted powdered sugar, 3 tablespoons half and half to make a frosting of spreading consistency. Add 1 teaspoon vanilla and 1/8 teaspoon salt. Beat to mix. Frost cooled pans of bars.
