FROSTED CANTALOUPE
Here is a fun way to serve cantaloupe. Honey dew melons would work, too. Show your family and friends that you really are a good cook. It is delicious.
FROSTED CANTALOUPE
Use a ripe firm melon. Cut off one end, remove seeds and peel the whole melon. Stand melon in a bowl, cut side up. Make the Jello mixture and pour inside the melon. One package of Jello will make enough filling for 2 melons. This is how you do it.
To 1 package of strawberry Jello,)or your favorite flavor) add 1 1/3 cups boiling water. Stir until dissolved and slightly cooled. Add desired fruit. Blueberries and diced peaches go well. Fill melon cavity with Jello mixture and chill until mixture is firm. Meanwhile, place 2 or 3 packages of softened cream cheese in a large bowl. Add enough light cream or milk until cheese is of spreading consistency. Next, cover the melon with the cream cheese mixture. Be sure to use a thick coat of cream cheese on the melon. When melon is completely covered. place on a bed of lettuce and garnish with additional blueberries and green grapes. To serve on salad plates, slice and place on greens. The whole melon makes a lovely centerpiece for parties.
