EASY ZUCCHINI PIE
No need for a pastry crust with this one. Just stir it up and pop it in the oven. An hour later and lunch is ready. Now don't tell me you don't know what to do with zucchini. This recipe is quick and easy to stir up.
EASY ZUCCHINI PIE
2 cups shredded zucchini
1/4 cup biscuit mix
3/4 cup (3 ounces) shredded Cheddar cheese
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon poultry seasoning
2 large eggs, lightly beaten
1/2 cup vegetable oil
In large bowl stir together all of the above ingredients. Pour into greased 9 inch pie plate. Bake at 350 F. for 45 minutes. Cool 10 minutes before serving.
