Easy Eggplant Parmesan
Eggplant is one of those veggies you either like or you don't. This recipe reminds me of a pizza. I suppose if you added a few slices or pepperoni, you could call it an eggplant pizza.
Easy Eggplant Parmesan
1 medium eggplant
1/2 cup melted butter or margarine
1/2 cup cornmeal
1/4 cup Parmesan cheese
1 small can pizza sauce
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley
Peel eggplant and cut in 1/2 inch slices. Dip eggplant in butter. Coat with a mixture of Parmesan cheese and cornmeal. Place on greased 15 by 20 inch jelly roll pan. Spread slices with pizza sauce. Combine Mozzarella cheese and parsley. Sprinkle over pizza sauce. Bake at 350 F. for 15 to 20 minutes or until eggplant is tender. Makes 4 servings.
