Curried Corn Chowder
When fresh corn is in season this is a good soup for a rainy day.
CURRIED CORN CHOWDER
2 cans cream of celery soup
5 cups fresh corn cut from 6 to 8 ears
2 teaspoons curry powder
2 green onions, sliced (white and green parts)
1 large tomato, seeded and diced
2 tablespoons fresh parsley leaves
In large pot, stir together the celery sou. 4 cups corn, curry powder and 2 cups water. Over medium heat , bring to a boil, stirring occasionally. Reduce heat to medium low. Cook until flavors blend, 10 minutes. Serve topped with remaining corn. Sprinkle with chopped green onions, tomato and parsley. Makes 6 servings.
