Cranberry Grape Salad
I am always looking for ways to fix table grapes. Grape go well with almost any other fruit. I never thought about using table grapes in a salad until a group from church took a trip to Cumberland Falls in Kentucky. We ate lunch there. They serve the most delicious grape salad. This recipe is tasty, too.
Cranberry Grape Salad
2 cups fresh or frozen cranberries
1 cup sugar
1 cup red or green table grapes
1/2 cup walnut or pecan pieces
8 ounce container Cool Whip, thawed
In food processor, whirl cranberries until minced. Add sugar. Place in container to schmooze overnight. The next morning place in colander to drain while you prepare the grapes and nuts. Press cranberries lightly to remove excess juice. (Keep juice for other use.) Cut grapes in half. Add grapes and nuts to well-drained cranberry mixture. Just before serving, fold in thawed Cool Whip to desired consistency. Mound into lettuce cups to serve immediately. Makes 4 servings.
