Crab au Gratin Appetizer
This is a good appetizer to serve around the holidays. Nothing special in it
except the imitation crab meat. You should have everything else.
Crab au Gratin Appetizer
2 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 cup half and half
1/4 cup chicken broth
2/3 cup imitation crab meat
4 ounce can mushroom stems and pieces, drained and chopped
1 tablespoon butter, melted
2 teaspoon minced chives
1/2 cup shredded cheddar cheese
1 tablespoon dry breadcrumbs
Assorted crackers
In saucepan, melt 2 tablespoons butter over medium-low heat. Stir in flour,
salt and paprika until smooth. Add half and half and chicken broth. Bring to
a boil. Cook and stir for 1 to 2 minutes or until thickened.
Stir in crab, mushroom and chives and heat through. Stir in cheese just until
melted.
Transfer to a greased shallow one quart baking dish. Toss breadcrumbs with
melted 1 tablespoon butter. Sprinkle over crab mixture. Bake uncovered in
preheat 400 F oven for 10 to 15 minutes or until bubbly.
Remove from oven and let stand 5 minutes.
Sprinkle with additional chives if desired. Serve with crackers. Makes about
2 cups.
