Corn flour tortillas
What can you do with the masa harina flour you see on the grocery shelf? I know mass farina flour is used to make tortillas, so that is what I do. It's different. Try it next time you need flour tortillas
CORN FLOUR TORTILLAS
2 cups wheat flour
1 cup masa farina
3/4 teaspoon salt
2 whole eggs
1 egg yolk
In food processor, combine flour, masa farina, salt whole eggs and egg yolk. With machine running, pour in 1/4 cup water and process until mixture resembles wet sand, about 20 seconds. Add a little more water if necessary. Turn out on work surface and knead dough until it forms a smooth ball, about 1 minute. Flatten into a disk and cover with plastic wrap. Let dough rest at room temperature for at least 30 minutes or in refrigerator overnight before rolling out into tortillas. Makes about 1 pound.
