Coffee Dot Fudge Candy

Wait until your friends try this candy. It is a smooth coffee-flavored fudge with chocolate bits and pecans. This is the old timey way to make fudge. You could vary it by using butterscotch bits.
Coffee Dot Fudge Candy
3 cups sugar
1 cup milk
1/2 cup half and half cream
2 teaspoons instant coffee granules
1 tablespoon light corn syrup
Dash of salt
3 tablespoons butter
1 teaspoon vanilla
1/2 cup (3 ounces) semi-sweet chocolate bits
1/2 cup broken pecan or walnut pieces.
Butter sides of heavy Dutch oven. In it, combine sugar, milk, half and half, instant coffee granules, corn syrup and salt. Heat over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil. Then, cook to soft ball stage (234F), stirring only if necessary to keep from scorching. Immediately remove from heat. Add butter and cool to lukewarm without stirring. Add vanilla. Beat vigorously until fudge becomes very thick and starts to lose its gloss. At once stir in chocolate bits and nuts. Quickly spread in buttered pan. Score into squares while warm, and if desired, top each square with a nut. Cut when firm.
