Coconut Macaroons
There have been times I needed a package of coconut macaroons to make a dessert recipe. If you do too, this is a good one to save you a trip to the store.
COCONUT MACAROONS
2 1/2 cups flaked coconut
1/3 cup plain flour
1/8 teaspoon salt
2/3 cup sweetened condensed milk
1 teaspoon vanilla
In medium mixing bowl, combine coconut, flour and salt. Add condensed milk and vanilla. Mix well. Batter will be stiff. Drop by tablespoonfuls I inch apart on greased baking sheet. Bake at 350 F. for 15 to 20 minutes or until golden brown. Remove to wire rack. Makes 8 cookies.
