Coconut Drop Cookies
I like coconut in just about anything sweet. This is an easy quick recipe that is cheap to make. Do you have all your ingredients measured out before you make a baking recipe? It is wise to do so even if you have made it a dozen times before. Forget any ingredient and the recipe will suffer for it. There is nothing worse than to start on the process of stirring up a batch of cookies and finding you only have one egg when you need two or three. It is also wise to measure everything out in their own dishes so you won't add too much milk for instance. Even though I have made these recipes many times, I first do that. No unpleasant surprises for me.
COCONUT DROP COOKIES
3 cups plain flour
3 teaspoons baking powder
3/4 teaspoon salt
3/4 cup shortening
1 1/4 cups granulated sugar
2 well-beaten eggs
1 teaspoon vanilla
2/3 cup milk
1 1/2 cups chredded coconut
Combine together flour, baking powder and salt. Cream shortening, adding sugar gradually and beating until light. Add well-beaten eggs and blend thoroughly. Add coconut and vanilla to shortening mixture. Beat well. Add dry ingredients alternately with milk. Mix well. Chill 1 hour. Drop by teaspoons 2 inches apart in well-greased baking sheet. Top each cookie with a few shreds of coconut. Bake at 400 F. for 8 to 10 minutes. Remove to rack to cool. Makes about 5 dozen cookies.
