Chicken potato casserole

When i was working full time and needed a dish for supper, I went to my pantry and selected a 12 ounce can of chicken breast. If you have that on hand, supper is easier and quicker to prepare. Or, you can slice a raw chicken bread in half and cook it in salted water, then chop it.

CHICKEN POTATO CASSEROLE
2 cups cooked chicken breast, cubed
3 cups raw sliced peeled potatoes
1 can cream of chicken or mushroom soup
1 cup milk
1 tablespoon flour
2 tablespoons butter'
Crushed potato chips or crushed Ritz crackers

In medium saucepan. melt butter. Add flour, soup and milk. Cook, stirring, until thick. Combine with sliced raw potatoes and cubed chicken. Bake in square 9 inch baking pan at 350 F. for 30 minutes. Add crushed chips or crackers. Bake until lightly browned, 20 to 30 minutes longer.
